Banana Walnut Protein Pancakes

(Entire Recipe)
380 calories  /  4g Fat  /  59g Carbohydrates  /  29g Protein


  • 2 Scoops Optimal Solutions® Vanilla Complete Protein & Vitamin Shake Mix
  • ½ Cup of Oatmeal (grinded into oat flour)
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1 Large Egg
  • 2 Tbs Non-Fat Greek Yogurt
  • 1 Medium Ripe Banana, Mashed (save ¼ of banana for topping, if desired)
  • Stevia to taste

Toppings: (optional)

  • 2 Tbs Sugar Free Syrup
  • Finely Chopped Walnuts (1 Tbs)
  • Fat-free Whipped Topping
  • Sliced Bananas


  1. Blend oats in a blender or magic bullet
  2. Combine dry ingredients (protein powder, oat flour, baking powder, cinnamon and Stevia)
  3. Add wet ingredients and mix well
  4. Pre-heat griddle/pan and spray with non-stick oil
  5. Slowly spoon or ladle batter into pan
  6. Cook until edges start to brown
  7. Flip pancakes and cook all the way through
  8. Add desired toppings, and enjoy!
