Red Velvet Protein Cupcakes with Greek Yogurt Frosting

For Cupcakes:

  • 2 scoops Nature’s Bounty Optimal Solutions® Chocolate Complete Protein & Vitamin Shake Mix
  • 1 cup Whole Wheat Flour
  • 1/2 cup cocoa powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 2 teaspoons zero calorie sweetner
  • 3/4 cup Fat Free Greek Yogurt (plain)
  • 1/2 cup Egg Whites
  • 1 teaspoon vanilla extract
  • 2 teaspoons red food coloring

For Frosting:

  • 1 cup reduced fat cream cheese
  • 2/3 cup non-fat Greek Yogurt
  • 2 cups confectioners’ sugar
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350 degrees
  2. Combine dry ingredients first, and then add wet
  3. Line tray with cupcake liners and pour batter evenly into the pan
  4. Bake cupcakes for 12 minutes, or until toothpick comes out clean
  5. While cupcakes are cooling, gather ingredients for cream cheese frosting
  6. Using a hand mixer, blend cream cheese, Greek yogurt and vanilla extract.
  7. Slowly add in the confectioners’ sugar until mixture becomes light and fluffy
  8. When cupcakes are completely cooled, add frosting and enjoy!
