A hit with kids! Serve with a salad and some crusty bread.
Ingredients
1 cup (200g) brown rice, uncooked
1 1/2 cups (360mL) water
3/4 pound (340g) extra lean ground beef, uncooked
3 cups (720mL) tomato sauce, canned (one 26-ounce can)
1 tsp (4g) pepper
1 tsp (2g) oregano
1/2 tsp (2g) garlic powder
1 1/4 cup (165g) part skim milk mozzarella cheese*, grated
Directions
Preheat oven to 350°F (175°C).
Place rice and water in a medium saucepan. Cover and bring to a boil.
Reduce heat and cook for 45 minutes. Turn off heat.
Brown ground beef in a large non-stick skillet. Add tomato sauce,
pepper, oregano and garlic to beef. Cover and cook for 15 minutes.
Add one cup (130g) mozzarella cheese to cooked rice; mix together.
Lightly oil a casserole dish. Place about one third of the rice and
cheese mixture in the casserole dish.
Place about one third of the beef mixture over the rice mixture. Repeat
layers, ending with the sauce.
Sprinkle top with the remaining grated cheese.
Bake for 30 minutes.
* Allergy notes: The egg protein lysozyme is an unlabeled additive in
some cheeses. People allergic to eggs should eliminate any cheese in this recipe.
